What I Ate Wednesday - Cinco de Mayo

After about two months of terrible eating around the wedding, it is time to get back to making healthy choices. With all the parties the month before the wedding and then 11 days on a cruise, the scale was being anything but kind to me. I find that I make the best choices and eat reasonable amounts when I log EVERYTHING. I am not one to use a fancy app to log all my meals. For me just keeping it all on an Excel spreadsheet is easiest. Here is a look into what I ate to get myself back on track towards healthy eating:

Breakfast: Green monster smoothie-spinach, milk, banana, and peanut butter. These are the bomb! They are filling, filled with healthy goodness, and so yummy! It tastes like a banana milkshake. I also love that I can throw in different things to change up the flavor: pineapples, strawberries, chocolate, etc.

Lunch: Giant salad- Salads are a lunch staple for me. I change up the flavors with different ingredients but they all have spinach, lettuce, tomato, carrots, and celery. This one also has blue cheese, sun dried tomatoes, garbanzo beans, cucumber, and balsamic vinaigrette.

Snacks: Zucchini sticks with hummus and a rice cake with peanut butter. I couldn't decide between a sweet or salty snack so I just went with a little of both.

Dinner: Baked chicken fajitas with cilantro lime rice and black beans. The baked chicken fajita recipe is so easy. I love that I just chop everything up, throw it in a casserole dish, and stick it in the oven. 30 minutes later dinner is ready to go. Dave had his on a tortilla but I piled the fajitas with the rice and beans on a bed of spinach for more veggies and less calories. So yummy!
