What I Ate Wednesday

It's HUMP DAY! I hope your week is going great so far! Mine has been quiet which has allowed me to cook some new recipes. :) Let's dive in....

Breakfast - Scrambled egg whites with spinach topped with salsa and sliced tomato.

Lunch - Salad with spinach, lettuce, tomato, carrots, celery, chickpeas, blue cheese, and balsamic

Snacks - Kale chips! Here's how I made them!

Another snack - Rice cake with peanut butter

Dinner - I made a variation of this Fried Quinoa "Rice". It was so yummy, filling, and full of veggies!
